Adamo Estate Winery, Pinot Noir
In 1988 Wayne Gretzky was traded to the L.A. Kings. For Wayne, this was an opportunity to grow the game of hockey in non-traditional markets.
This year Adamo Estate Winery is paired with NHL teams in non-traditional hockey markets.
Why?
Because generally people don’t think of the Hockley Valley (about 1 hour 30 minutes north of Toronto) as one of Ontario’s wine growing regions. Adamo Estate Winery has the ambition and drive to change this.

This year’s L.A. Kings lineup is a threat with a complex balance of old and new. The old – Anže Kopitar, a 36 year old prototypical big 2-way centerman is a lot like the Pinot Noir grape, he has aged well and continues to produce at an All-Star level. Quinton Byfield is the new. At 21 years old, Byfield may not be as established in the NHL yet, but is looking to make a mark. He up just a short drive away from Adamo Estate along highway 9.
Put these two players together as a wine, along with the history of Wayne Gretzky going to L.A. and you get the Adamo Estate Winery Pinot Noir as this year’s team pairing.

Appearance:
A bright golden straw colour with silver hues.
Winemaking:
These grapes were harvested by hand with specific timing that incorporated ripe fruit flavours and fresh acidity. We hand harvested and whole cluster pressed the grapes in our gentle bladder press. A long, slow press cycle was used to allow maximum juice yield without compromising flavour extraction. The juice was cold settled in a stainless tank before racking into barrels for alcoholic and malolactic fermentations. The barrel was carefully monitored and tasted for 10 months, before any sulphur additions took place. After aging was complete the barrel was racked into tank where it settled with a light bentonite fining. A very light filtration took place, which prevented any stripping of the flavours and textures, before bottling.
